Almond-Crusted Chicken Tenders
A house favorite…
This is easily a favorite meal at our house.
I'd love to tell you that it freezes well...but we've never had leftovers past the second day.
Usually the leftovers don't even make it to a second meal...they get snacked on.
That's how good these chicken tenders are.
Seriously. No joke.
Recipe
Ingredients:
Chicken - 1 lb, trimmed - breasts or thighs
Almond Flour - 1 cup
Salt - 2 tsp
Paprika - 2 tsp
Black Pepper - 2 tsp
Egg - 1
Water - 2 tbsp
Directions:
Preheat your oven to 425°F and line your baking tray with parchment paper.
Mix the almond flour, salt, paprika, and black pepper in a large bowl.
Whisk the egg and water together in a different bowl.
Dip each piece of chicken first into the egg wash, then place in the dry mixture and coat the entire piece of chicken with the mixture. Place on your baking tray.
Repeat with all of the chicken.
Bake the chicken for 15 - 20 minutes or until the juices run clear.
