Favorite Chicken Pot Pie

We are in full cozy food mode over here and there isn't anything much cozier than homemade chicken pot pie.

This easy-peasy recipe will serve your family well for dinner and the leftovers are fabulous!
Recipe
Ingredients:
Chicken breast, cubed - 1 pound
Carrots, diced - 1 cup
Potatoes, cubed - 3 small
Celery, diced - 1/2 cup
Butter - 1/3 cup
Onion, chopped - 1/3 cup
Garlic, minced - 3 cloves
AP Flour - 1/3 cup
Salt - 1/2 tsp
Black Pepper - 1/4 tsp
Cajun seasoning - 1/4 tsp
Celery Seed - 1/4 tsp
3 cups chicken broth
Milk - 2/3 cup
Pie Crusts, unbaked - set of 2 (9-inch)
Directions:
Preheat oven to 425°F.
Combine chicken, carrots, potatoes, and celery in a pot. Add 3 cups of chicken broth and bring to a boil. Boil for 15 minutes or until potatoes are soft.
While the chicken and veggies are cooking, melt the butter in a skillet over medium heat. Add the garlic and onion and cook until soft and translucent, about five minutes.
Stir in the flour, salt, pepper, Cajun spice, and celery seed.
Drain the broth from the chicken and veggies mixture and add 1 3/4 cup of it to the garlic/onion/butter mixture.
Add the milk to the garlic/onion/butter mixture.
Reduce heat to medium-low and simmer the sauce until thick - five to ten minutes. Remove from heat.
Place chicken and veggies in the bottom pie crust. Pour the sauce mixture over the top. If you don't have enough sauce, add the rest of the chicken broth (from cooking the chicken and veggies).
Cover with the top crust, seal the edges, and trim away any extra dough. Make several cuts in the top crust to allow steam to escape while baking.
Bake in your preheated oven for 30-35 minutes, or until the top crust is golden brown.
Cool for five to ten minutes before serving.
Notes
1) This is also a great way to use up leftover chicken. Simply add your pre-cooked chicken to the chicken and veggie mixture during the last five minutes of boiling (Step 2) to reheat it.
2) You'll note there are no "traditional" chicken-pot-pie peas in this recipe. That's simply because our household hates cooked peas. Feel free to add them or any of your other favorite veggies to this dish in their place. We've done additions such as cherry tomatoes and bell peppers and they've turned out great. Simply remember that some of these veggies have higher water content, so you may not need as much sauce.
3) If you aren't a spicy fan, simply leave out the Cajun spice. :)
