My Favorite Tacos
So easy. And delicious, too.
If you’re like me, you grew up with tacos made from a seasoning packet.
You browned the burger, tossed in the mystery seasonings and voila! Tacos.
If that’s still your version of tacos, then this recipe will blow your mind.
All real ingredients. No mystery fillers in the packet. And suuuuuper easy for a fast weeknight meal.
Recipe
Ingredients:
Olive Oil - ½ tbs
Garlic, minced - 3 cloves
Huhta Homestead Ground Beef - 1 lb
Cumin - 1 ½ tsp
Coriander - 1 ½ tsp
Salt - ¾ tsp
Tomatoes, diced - 2 large
Bell Peppers, diced - 2 large
Onion, diced - 1 medium
Tortillas - 8
Lettuce/Salad Mix, rough chopped - 3 cups
Cheddar Cheese, grated - ½ cup
Toppings of your choice (salsa, jalepeño sauce, etc.)
Directions:
Heat olive oil in a large skillet.
Over medium-high heat, add garlic and cook for 30 seconds, until just starting to brown.
Add ground beef and cook until browned.
Add cumin, coriander, and salt. Mix in thoroughly.
Add tomatoes, bell peppers, and onions. Cook about five minutes, until veggies are soft and any tomato juice has been absorbed.
Fill your tortilla with the meat and veggie mixture, to with lettuce/salad mix, cheddar cheese, and any other toppings that you’d like!
Notes
1) Go wild with the recipe. Drowning in summer squash? Dice up a few and cook with the other veggies. Like it a bit hotter? Add in a jalapeño or two.
2) This also makes for a delicious taco salad. Crunch up some corn chips, add more lettuce, and you’ve got yourself a delicious and healthy meal.
3) This freezes soooooo well. Simply divide up in to whatever portions work for you and you’ll have simplified your life down the road.
