When most folks think of beef, their minds immediately go to steaks, roasts, ground beef…all the “usual” stuff.
And let’s be real - you get a TON of those cuts when you invest in a beef share.
But you know what else you get? All of the amazingly delightful, but less common cuts as well.
So what kind of hard-to-find items do I mean?
With a beef share, you’ll be able to try:
Soup bones - These bones are perfect for turning into nutrient-dense, collagen-rich bone broth (and I’ve got the recipe ready to go for you!) Once you try homemade broth, you’ll never want to buy boxed broth from the store ever again.
Short ribs & brisket - These cuts have incredible flavor for slow cooking and smoking - hello summertime favorites!
Oxtail & tongue - Ready to step outside your comfort zone? I’ve had multiple customers tell me how glad they are that they took a leap of faith and tried these cuts. Oxtail stew and tongue tacos are now favorites in their houses.
Liver, heart, kidneys - These organ meats are nutrient power-houses!
Fat (suet)- Have you been wanting to jump on the tallow bandwagon? This is your chance. Beef fat (suet) is rendered (melted and filtered) into tallow. Once prepared, you can use it for cooking or homemade cosmetics like your very own lotion and soap.
So you’ve got to be wondering - if these cuts are so great, why haven’t I run into them at the grocery store?
Grocery stores have to be pragmatic - they sell whatever is easiest to sell.
Since most of us have become accustomed to the basic, “standard” cuts of meat, this leaves many of these less common, but delicious cuts behind.
And if you happen find these awesome cuts in butcher shops, they’re usually more expensive and in limited supply.
